Gourmet anything has the connotation that it is something special, something suave, something extra or out of the ordinary. IT should be, but frequently is not in today's society. When I talk of gourmet foods I am talking about foods that have truly higher nutrient values meaning values of minerals, vitamins, enzymes, phytonutrients, fatty acids and antioxidants that are greater than the standard. The starndard today is truly substandard as it is only an average of the status quo. The status quo food is poor at best. It must be rescued from nature's garbage collectors (insects) using poisonous chemicals in order for it to make it to the store. It's an oxymoron; applying poison to food! so you can claim it is healthy?
Food that is in fact healthy and healthful, is not food for insects and does not need poisonous chemcials to rescue it from their devouring. Insects do not have the same digestive systems as we do; they do not survive disease free on the same food requirements as we do. They cannot digest the same complex nutrients we can. So why do they eat "our food."? They don't, not in nature anyway. Insects, herbivor insects, are pesent to eliminate those plants that don't contain sufficient nutrition to maintain our health, pure and simple. Of course that doesn't sell much pesticide and of course we all know that the pesticide companies are devinely commissioned to "protect" us from the ravages of nature. After all, we could not have survived all the melenia of time without the pesticide companies. WRONG!!!!!!
When the farmer or gardener achieves and minimum threshold and balance of nutrition in his/her plants, insects will NOT eat them. They will be sweet to the taste, dehydrate in the frig, not rot; they will satisfy one's cravings without bloating the gut; they will have a "quality and character" of taste (think about fine wine), they are gourmet foods.
